Notes:
Filters - Stopped using double filters. Only used the thick wool type filters, wet at draw off from evaporator, and again after finish before bottling. Push point of cone up into filter makes it drain faster. Paper type filters used to filter raw sap into storage tank.

Finish - Should see all of red line on brix, sometimes even going just below red line.

Draw - Draw off evaporator at 219 degrees near the valve and continue till large bubbles are gone or going away.
